La Polenta, from America to Italy: How food tells us about our history

Many times we approach our food without wondering where it came from or how it got to our table.
But most foods we consume have an interesting story that tells us about how humans have being moving around the world. Corn or maiz has moved my interest way before I came to Mexico in 1997 and this is why: Many years ago, after I finished my history courses in university I decided to go on to Veterinarian school. One of the first exams is about how to feed farm animals, with basically a botanic exam. Corn was there, among the other plants because in Europe it has a privileged place in the animal feeding chain.

 Many populations in Italy consume corn in the form of polenta, which is equivalent to grits in northern America.
When Columbus came to America he was amazed by the use of corn in the indigenous communities and decided to bring it to Italy. Corn grows faster that other cereals and it is not as delicate to weather conditions, so it was immediately adopted as a main cereal by the farmers of mostly northern Italy populations, partly because the land owners saw the possibility to save more noble seeds for their use and economics.
The mills in Europe were very well developed since the times of the first use of wheat, so the corn was thrown in the mills and crushed directly.

The Europeans had ignored a process which the indigenous used before consuming corn: NIXTAMALIZACIÓN. The maiz was , and is today, picked from the plant and then boiled with lime until tender. Corn has a big amount of vitamins of the B group but in a form that is not assimilable for humans. The acidity of the lime breaks the moleculas of the corn and turns it into digestible for humans. The nixtamalized corn is drained from the water with lime and dried in the sun. Only after this long process is crushed with a metate. In the mainland of Mexico it is very common to see this process done by indigenous women in every town Fiesta. And the best tortillas are the ones which still have a bit of corn crushed coursley so you feel it crunchy under your teeth. I imagine that when the Europeans came to America and saw this all process, with the classic mentality of the conquerer they must have though " look at this Indians, they loose so much time in preparing the flour because they where never able to build a mill, haha, So let's import it and just chrush it with our fabulous technology! The result was a desaster for many years. Up to the mid twentieth century we still had people in Italy dying from Pellagra, an illness provoqued by the lack of vitamin B.

In Italy polenta is prepared mostly as a puré of corn, with water and salt. Once the polenta is made, the seasoning is what changes the presentation: The simplest is butter and parmesan cheese. Corn is grown in the north of the country, where the main dairy comes from cows, so butter is always available. Normally polenta accompanies meat, either grilled or stewed, but going towards the mountains of the south, in the Appenines we find less cows and more sheep and pork, so instead of butter we find the polenta with pork sausages, usually with tomato sauce and pecorino cheese. In the farmers cuisine it is a sin to throw away food, so there is a very interesting use for leftover polenta. Sliced and fried or grilled it is a wonderful substitute for bruschetta. It can be served with tomato sauce, with grilled cheese, mushrooms, sautéd vegetables.

Del vino y de las copas

Cada vez que me siento a comer en un restaurante "elegante" tengo que hacer la lucha contra la moda de las copas de vino. En Italia, Francia, España, Grecia, países productores de vino desde la antiquedad, este elixir del buen humor se consume en copas de barro. Fueron los Medici en Florencia en el 1400-500 que empezaron a tomarlo servido en copas de cristal de roca, osea escarvadas en cristal transparente, y a darle otro aspecto. Desde entonces hasta el día de hoy el vino se sigue consumiendo en vasos o copas chicas. En los años ochenta, cuando Estados Unidos empezó a producir vino, lo que era una costumbre de todos los días en gran parte de los países europeos, se volvió moda, y con esto se empezó a acompañar con una serie de accesorios que lentamente pero inexorablemente ne estan destrozando el sentido.La copas altas son parte de este juego. Empezamos por partes. Comer, que es una de las joyas de la vida, es también desde el principio de todos los tiempos un metodo natural para socializar y reforzar los líos que forman una sociedad de individuos. Desde el principio de la historia del hombre todos los eventos que marcan el ciclo de la vida de un individuo y de la sociedad se realizan al rededor de una mesa. Nacimientos, matrimonios funerales, y más, acordes económicos, pactas políticas y todas las demás actividades humanas son acompañadas por la comida. La razón de esto es que compartiendo comida se cementan las relaciones sociales. Asi como en la manada de animales compartir la comida es una de las bases de la organización social. He visto y creado nuevas amistades organizando cenas de personas que no se conocían y solo por servir la comida al centro de la mesa para que cada comensal se sirviera empezaron conversaciones y escambios de ideas que llevaron a la creación de nuevos grupos de personas. Para que esto pase es fundamental que la "mise en place" de la mesa sea comoda y facilite la posibilidad de compartir. Hay que evitar los floreros altos de centro de mesa y hay que utilizar mesas donde sea fácil servirse sin estirarse demasiado para alcanzar un plato. Y obvio, hay que evitar las copas de vino altas. Todos los elementos altos en la mesa se vuelven barreras arquitectónicas impidiendo la conversación entre los comensales. Pero no se trata solo de esto. En Europa, por ejemplo, es mala educación agrarrar la copa con la mano en el pié. Se tiene que agarrar del balón. Pero si el balón es demasiado ancho no te cabe en la mano: se resbala y se rompe - como me pasó hace unos días en un restaurante muy bonito en Todos Santos. Si el pié es más alto de 5 centimetros, la copa estará de estorbo entre un comensal y lo que esta sentado en frente, impidiendo cualquier conversación. Y más: cuando vamos a un restaurante nuevo o a una degustación de comida no hay nada más divertido que compartir, como en los restaurantes chinos. Inútil aclarar que con copas alta 20 a 30 centimetros esto es definitivamente imposíble. En la mesa hay que estar cómodo. No es necesario aparentar. Yo pido siempre que me cambien la copa con un vaso y cuando se enteran que soy master chef y docente de historia de gastronomía me miran feo, pero en la mesa hay que sentise a gusto y esto tiene que ir antes de las costumbres impuestas por los que las copas la fabrican muy frágiles y carísima para crear una economía del vino que no tiene nada que ver con el liquido vital que acompaña la humanidad desde epocas antiguisimas y que es parte de las joyas de la vida.
